Food starches are used to provide texture and body to a variety of products. Native starches are used in powder form to absorb moisture and as fillers and bulking agents. When cooked they serve as thickeners and texturizers.
Modified cook-up starches are the standard of quality for use as thickeners and stabilizers with heat, shear, acid and/or freeze-thaw stability.
